Audio/Video Mismatch
When the grandfather is playing the recorder he takes breaths on notes instead of between notes.

Continuity
When Victor is about to make Elizabeth live again, he pulls the cover off Justine's body twice.

Revealing Mistakes
After Elizabeth lights herself on fire and runs down the hallway, she jumps off the staircase to the landing below. As she is falling towards the floor, you can see the floor is darkened with "soot" in the exact spot she is about to land before she hits. This shows evidence of previous takes but the floor was not cleaned between takes revealing the already scorched floor.

Revealing Mistakes
When William is brought back to the house in Elizabeth's arms, dead or unconscious, you can see him grab for the blanket that is thrown over his body.
Trivia:
It was during the filming of this movie that Kenneth Branagh, then married to Emma Thompson, fell in love with Helena Bonham Carter.

Producer Francis Ford Coppola had originally planned to direct the film himself as a companion piece to Dracula (1992), but eventually stepped back to let Kenneth Branagh direct. Coppola later regretted his decision after a number of disagreements with Branagh during filming.

Kate Winslet auditioned for the role of Elizabeth in Kenneth Branagh's Frankenstein. Helena Bonham Carter was selected for the role, but Branagh was so impressed by Winslet that he offered her the part of Ophelia in Hamlet (1996). Bonham Carter played Ophelia in 'Franco Zefferelli''s 1990 version of Hamlet (1990).
